The dark side of cakes

So i got my first weeding cake request the other day, it’s not for a few weeks yet and I am approaching it the way I would a graphic design project, moodboards, meetings, etc etc. It’s going pretty well and the client seems to be happy, all the flavours are set but there is one thing I need to do before and that is to test those flavours out on someone.

Step into the arena my mate Massimo Minale, the founder of the amazing Buster and Punch. He has invited me and the family round for what he describes as his mums speciality, which to be honest, put every guest on that evening into a state of confusion when he served up a platter of Jamaican Curry. His mum is neither Jamaican or a curry.

Anyhoo I said I would bring a cake round as I needed to test out a few flavours for this wedding cake I was making. I of course had to buster it up a little so in with the dark colours and a couple of metallics and a seasonal blackberry from the garden. The flavours however were exactly the same as the wedding cake I intend to make. I wont tell you what they are right now, you can read about those in the wedding cake post later on.

These mini cakes are quite nice to make, not too much work and they give you a good chance to experiment a little. Don’t think it turned out too badly, me mates certainly thought so.
